This giant fruit topiary was produced with the brilliance of Richard Clarkson (that’s his head!) and the divine Emilie Baltz. Special thanks to my classmates for helping me chop and skewer aTON of fruit and melons. The fruit was marinated in a ginger-lemon simple syrup overnight and accompanied by a tahini, yogurt and agave dipping sauce. The left over melon juice was then blended with seltzer to produce a variety of aqua frescas.
